INGREDIENTS
1 cup full fat Greek yoghurt
1 large egg, lightly beaten
1 cup of water
1 tbsp melted butter
1 1/4 cups crumbled Greek feta
1 cup flour
2 tbsp whole milk
2 tbsp extra virgin olive oil EVGE
1. Preheat oven to 350F
2. In a large bowl combine the yoghurt, egg and water. Mix in the melted butter, 3/4 cup of feta and finally, the flour. Stir well. It should have the consistency of a thick batter.
3. Rub a 9×11 pan with butter and pour in the batter and spread evenly.
4. In a small bowl, mix the remaining 1/2 cup feta with the milk and olive oil & spread evenly on top of the batter in the baking pan.
5.Place pan in the center rack and bake until set and golden–about 1 hour.
